IMG_1063Yes, if there was a breakfast heaven this one would be sure in it. This is also one of these recipes that when you see the result it’s hard to believe they are actually clean.

Ingredients:

For the pancakes (makes about 5-6 pancakes, big breakfast for 1)

  • 1 dl whole-wheat flour (oatflour, almond flour or another type of healthy flour will work too)
  • 0,75 dl milk (you can use whatever milk you like, I prefer soya milk but today I used normal low fat milk)
  • 2 eggwhites
  • 2 tablespoons 100 % cacao powder
  • ½ ripe banana (just like all recipes with bananas: the riper, the sweeter, the better)

I added today:

  • A handful of blueberries and raspberries (I used frozen ones but fresh ones will even be better)
  • Some Greek yogurt (I used total 0%)
  • Some raspberry blackberry quark (I used optimel 0%)
  • The other half of the banana on the side
  • A little bit of grated coconut (optional)IMG_1044

Pancakes:

  • Mix the egg, milk and flour together
  • Mash the ½ banana and add it together with the cacao.
  • Mix it all until you’ve got a smooth dough

  • Put some oil (or whatever you want to use to not make them stick) in a pan, put on medium heat and make little pancakes with a big spoon
  • When there are little bubbles on the top of the pancakes, flip them
  • Fry them until they are dark brown

  • Put the berries in a little tray and put them in the microwave for about 1 -2 minutes
  • Layer the pancakes with the yogurt and quark
  • Slice the rest of the banana and put it on the side with some more yogurt and quark
  • Add the berries, sprinkle with the coconut and enjoy!
