IMG_3823Yes, you read that right. One of the most fattening desserts turned into a pretty healthy breakfast (or dessert, snack, whatever)

 

Ingredients:

For the pancakes

  • 0,5 dl really strong coffee  (I used instant coffee, I just mixed 1 tablespoon instant coffee with 0,5 dl water and let it cool)
  • 2 tablespoons milk
  • 2 egg whites
  • 0,75 dl flour
  • ½ ripe banana

For cream:

  • 3 tablespoons light cream cheese (I used Philadelphia)
  • 1 tablespoon yogurt
  • ½ ripe banana
  • about 3 tablespoons pure cacao powder
  • Mash the banana and mix it with all other ingredients for the pancakes
  • Put some oil (or whatever you want to use to not make them stick) in a pan, put on medium heat and make little pancakes with a big spoon
  • When there are little bubbles on the top of the pancakes, flip them
  • Fry them until they are dark brown

  • Also mash the other half of the banana and mix it with the cream cheese and yogurt
  • Put the coffee pancakes on a plate and top the first one with some of the cream
  • Sprinkle some of the cacao on top of the first layer and put another pancake on it
  • Also top this pancake with cream and sprinkle with some cocao again

  • Repeat this until you used all of the pancakes
