IMG_4012No caption needed. No more craving for unhealthy carrot cake after trying this one, promise!

 

Ingredients:

For the cake

  • 2 egg whites
  • 3 tablespoons cottage cheese
  • 2 tablespoons Greek yogurt
  • 3 tablespoons whole wheat flour (as always, oat flour or another type of healthy flour will work too)
  • 4 tablespoons grated carrot
  • 1 ripe banana
  • 2 tablespoons cinnamon
  • Some crunched walnuts (optional)
  • Some raisins (optional)

For topping

  • 3 tablespoons of light cream cheese (I used Philadelphia)
  • 1 tablespoon natural quark (or Greek yogurt)
  • Another tablespoon grated carrot
  • Some more walnuts
  • Preheat the oven to 170 C
  • Mix the egg whites, cottage cheese, Greek yogurt, flour and cinnamon
  • Mash the banana and add it to the dough with the carrot, walnuts and raisins
  • Put it in the oven for 9-13 minutesIMG_3993
  • Mix the cream cheese with the quark
  • Let the cake cool down a bit, put it on a plate and top it with the cream, carrot and walnuts
  • Enjoy!
