IMG_4075Favorite cake/dessert of a lot of people as a guilt free breakfast.

Ingredients:

For the crust (it depends on how big your baking tray is, so you may need to chance the quantities a bit for a bigger or smaller crust)

  • 4 tablespoons whole wheat flour (oat flour or another type of healthy flour will work too)
  • 4 tablespoons grated coconut
  • 3 tablespoons oil

For the cheese layer

  • 2 egg whites
  • 4 tablespoons cottage cheese
  • 2 tablespoons Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon whole wheat flour (same story as above)
  • Sweetner if you like (I didn’t use any but if you like it a bit sweeter you could add a bit stevia, some drops of honey or another “healthy” sweetner)

For the topping

  • Hand full of strawberries (I used about 5)
  • 2 tablespoons grated coconut
  • Pre heat the oven to 185 C
  • Mix all the ingredients for the crust
  • Press down in a baking tray and put in the oven for about 5-8 minIMG_4056 IMG_4057
  • Mix all the ingredients for the cheese layer together and put in on top of the crust when it’s ready

  • Put it back in the oven for 9-12 min (until it’s all solid, make sure it doesn’t burn, it gets too  easily dry when it has been in the oven too long)
  • But the strawberries in a blender (or mash them with a fork) and mix it with the coconut
  • Let the cake cool a bit, get it out the baking tray and put in on a plateIMG_4062 IMG_4063
  • Top it with the strawberry mash and enjoy!
