IMG_4142Yum. That’s all I say.

  • 2 egg whites
  • 4 tablespoons whole wheat flour (oat flour or another type of healthy flour will work fine too)
  • 2 tablespoons cottage cheese
  • 4 tablespoons coconut milk
  • ½ mango
  •  ½ ripe banana
  • 3 tablespoons grated coconut
  • ½ tablespoons cinnamon
  • Hand full of raisins
  • Pre heat the oven to 170 degrees
  • Mix the egg, flour, cottage cheese, coconut milk, cinnamon and coconut
  • Mash the banana and cut the mango into little pieces
  • Add the fruit and raisins to the dough
  • Put a bit oil (or whatever you want to use to not make them stick) in little baking trays (or coffee mugs will work fine too) and put the dough in there
  • Bake them for 11-15 min
  • Let them cool a bit and put them on a plate
  • Top them with the rest of the fruit or whatever you fancy and enjoy!

IMG_4141IMG_4142I made them for an easter breakfast so I made them look like bunnies and had them with my fluffy oatpancakes (click here for the recipe) and healthy chocomousse (click here for the recipe).
