IMG_0209Yep, I really like sweet potatoes. And so I do bananas. And I love pancakes. So why not combine all of them? I usually never link to other recipes, simply because I never really use them. Or I change them so much that it’s not worth giving credit anymore. But this time it is. The original recipe was so good that I barely changed it so it’s fare to give some credit. Click here for original recipe I used. I just changed the whole eggs for egg whites and added some cinnamon. And the main reason I’ll still post the hole recipe here is that the original one is in Swedish, so I guess this will be a lot easier to understand for most of you (and no, I don’t speak Swedish, Google translate was my friend).

Ingredients:

  • 1/2 medium sweet potato
  • ½ ripe banana
  • 3 eggwhites
  • ½ tablespoon cinnamon
  • First the sweet potato need to be soft. You could do this in two ways: in the oven or in the microwave. The taste of the sweet potato remains the best in the oven, you should pre heat the oven to 200 C and put the potato in there for about 25 – 45 min (depending on the size) until it feels soft enough to mash. But if you want it to be done faster the microwave works fine too. Just put it in the microwave for about 7 – 15 min also until it’s soft enough to mash.
  • Mash the sweet potato and the banana with a fork and mix it with the egg and cinnamon until you’ve got a smooth dough

  • Put some oil (or whatever you want to use to not make it stick) in a pan and fry them until they are gold brown
  • Top them with whatever you like and enjoy!
