IMG_0862I’ve got a new addiction lately, sweet potatoes. The variations are endless. They are amazing with sweet fruit for breakfast but also really good with salty veggies for lunch or dinner. You can bake them, fry them, make brownies of them , microwave them or make pancakes of them. I’ll show how to do the last one right here.

Ingredients:

  • 1 medium sweet potato
  • 3 eggwhites
  • First the sweet potato need to be soft. You could do this in two ways: in the oven or in the microwave. The taste of the sweet potato remains the best in the oven, you should pre heat the oven to 200 C and put the potato in there for about 25 – 45 min (depending on the size) until it feels soft enough to mash. But if you want it to be done faster the microwave works fine too. Just put it in the microwave for about 7 – 15 min also until it’s soft enough to mash.
  • When the potato is soft mash it well with a fork and mix it with the egg until you’ve got a smooth dough
  • Put some oil (or whatever you want to use to not make it stick) in a pan and fry them until they are gold brown
  • Top them with whatever you like and enjoy!

I topped them with a blueberry yogurt sauce (just some yogurt and blueberries blend together) some more blueberries, raisins and a dark chocolate egg (it was easter when I made them)IMG_0858IMG_0859

Like I said, these are amazing with fruits but you can also have them with veggies for lunch!
