Yes, you read that right. One of the most fattening desserts turned into a pretty healthy breakfast (or dessert, snack, whatever)
Ingredients:
For the pancakes
- 0,5 dl really strong coffee (I used instant coffee, I just mixed 1 tablespoon instant coffee with 0,5 dl water and let it cool)
- 2 tablespoons milk
- 2 egg whites
- 0,75 dl flour
- ½ ripe banana
For cream:
- 3 tablespoons light cream cheese (I used Philadelphia)
- 1 tablespoon yogurt
- ½ ripe banana
- about 3 tablespoons pure cacao powder
- Mash the banana and mix it with all other ingredients for the pancakes
- Put some oil (or whatever you want to use to not make them stick) in a pan, put on medium heat and make little pancakes with a big spoon
- When there are little bubbles on the top of the pancakes, flip them
- Fry them until they are dark brown
- Also mash the other half of the banana and mix it with the cream cheese and yogurt
- Put the coffee pancakes on a plate and top the first one with some of the cream
- Sprinkle some of the cacao on top of the first layer and put another pancake on it
- Also top this pancake with cream and sprinkle with some cocao again
